Quick and Easy Recipes on St. Patrick’s Day

Hey friends! Hope you enjoyed my St. Patrick’s Day cocktails. Now it’s time to enjoy some quick and easy green recipes. So here we go!
Green Fritters (Broccoli and Peas Fritters) - These green crispy and quick fritters make a perfect party appetizers for St. Patrick's Day celebration. Broccoli boosts up the immune system and also helps in preventing cancer. It also maintains the cholesterol level. On the other hand, peas help in managing weight and blood sugar level and cholesterol level. It prevents from aging and keeps the heart healthy. I would love pairing these fritters with my all time fav Cheesy Beer Dip. What would you pair it with?
Green Bars (Creamy Lime Bars) - Green lime bars are made up of simple ingredients. This recipe is quite similar to key lime pie, except that I add in few drops of mint syrup to get that green color for St. Patrick's Day. Despite of the creamy texture, I find the recipe refreshing and sweet. The best part is that you can offer green bars to your guests at home and also gift the bars to someone special. I couldn't resist having few bars while preparing the recipe. 
Green Chicken (Mint Sauce Chicken) - Having green chicken on St Patrick's day is definitely a big hit! The idea behind this green chicken is simple. Broil chicken pieces with ginger and garlic paste coated on them. Set aside. Prefer boneless. Prepare a green sauce (this does not require cooking). In the blender, add in coriander, mint leaves, lemon juice, green chillies, salt and pepper. Take a wok and add in broiled pieces. Add the green sauce, toss the pieces and heat for two minutes. Serve at once as bitings on St Patrick's day.

Valentine’s Day Food - Sushi Hearts

The day of love is here! Everyone is undoubtedly planning to surprise their spouse with a token of love and admiration. Hope you enjoyed my Valentine’s day ideas for food. My Aunt Poly recently had an awesome trip to Japan. She had to attend her relative’s wedding. The couple planned to go for a week to utilize their visit to the fullest. I think it's a great idea. Yesterday, they came in for tea and were talking about the yummy Japanese food other than anything else. She loved sushi. It suddenly struck my mind to prepare the same for my loved one, this Valentine's Day. Sushi stands among the most popular Japanese food. Sushi is basically a cold roll of fish and rice. The ingredients and preparation methods varies from place to place. 
Day by day, the popularity of this Japanese food is increasing. This results using the recipe in numerous delectable. Some unique Japanese ingredients have been used in the recipe which are readily available in the stores nearby. Nori seaweed sheet is an edible red seaweed that is popular in East Asia. I have used wasabi paste here. Mix equal amounts of wasabi powder and water to make wasabi paste. Wasabi is a Japanese plant with thick green root tasting like horseradish. Wasabi powder is easily available in the market. I have also used sushi ginger AKA gari. This is nothing but thinly sliced young ginger marinated in a solution of sugar and vinegar. So surprise your love with something unique!
Ingredients:-
200 grams cooked Rice,
4 Nori Seaweed Sheets,
4 tablespoons Sushi Rice Vinegar,
For Seasoning:-
1 tablespoon Soy Sauce,
1 teaspoon Wasabi Paste,
20 grams Sushi Ginger (Optional).
For Filling:-
2 thinly sliced Avocados,
200 grams Fish Roe Egg,
200 grams Raw Tuna or Salmon,
50 grams Sesame Seeds (optional).
Preparation Method:-
  1. Before you make sushi, prepare the sushi rice that will be used. Just mix cooked rice with 4 tablespoons of sushi rice vinegar.
  2. Slice avocado and fish into long, thin strips. Try keeping the thickness of both ingredients upto 2 cm.
  3. Take a sheet of nori seaweed and cut it in half before spreading cooked rice on it. Flip it over, such that rice is facing down. Place avocado slices and fish on the nori seaweed such that it’s covered.
  4. Take a sushi rolling mat. Compress rolls, so that they are tight and solid. Now push the side of the sushi roll furthest away from you down with the mat so that it starts spreading out.
  5. Our goal is to create a teardrop shape with the sushi roll. This will form one half of the heart piece.
  6. Then carefully peel away the plastic. Press two teardrop pieces together to create one whole heart piece. Serve the finished sushi to your love.

Tangy Pork Skewers with Yogurt Dip

Hey pals! It’s crazy Christmas month and I have not prepared pork since a long time. Last time I prepared Sweet and Sour Pork, and I’m glad that everyone appreciated it so much. So a big thank you. This time I thought of including a marinade recipe, coz it has a unique flavor of it’s own. Skewers add on to the party mood. Tangy food on the stick make a great appetizer. Everyone loves preparing skewers for their utmost ease and versatility. 
A well prepared marinade not only keeps the grilling food flavorful and moist, but they make it healthier imbibing the citrus agent within. The best part is that this is a flexible recipe where in you can grill or fry pork as per choice. Nevertheless, they are a great addition to a buffet table. An appetizer is incomplete without crazy Christmas dips. Isn't it? More than these tangy pork skewers, I’m excited about the cucumber, dill and yogurt dip. The winning dip would definitely score big at any gathering. This is truly a party dip. So, ready for the party fun with some real tasty yummzz?
Ingredients:-
2 cups Plain Yogurt,
8 small White Onions,
4 minced Garlic Cloves,
900 grams Pork Cubes,
1 diced Red Bell Pepper,
1 diced Yellow Bell Pepper,
2 tablespoons Lemon Juice,
1/2 teaspoon Ground Cumin,
1/2 teaspoon Ground Coriander.
Preparation Method:-
1. Prepare the marinade. In a bowl combine the yogurt, lemon juice, garlic, cumin and coriander. Mix well. Add pork, cover and refrigerate for about 6 hours.
2. Cut bell peppers into squares. Add pork, onions and peppers onto the skewers. Preheat the grill.
3. Grill for about 35 minutes or until pork is cooked properly. You can also fry incase you are fond of fried pork yummzz. Serve with your favorite dip.
Cucumber, Dill and Yogurt Dip 
This is my favorite dip. The best part of this dip is that it can be made a day before the Christmas. Keep it in refrigerator and serve when the skewers are completely ready.
Ingredients:-
2 cups Yogurt,
1 tablespoon Salt,
1 grated Cucumber,
1/2 cup Sour Cream,
1 tablespoon Olive Oil,
1 minced Garlic Clove,
2 tablespoons minced Dill,
2 tablespoons Lemon juice.
Preparation Method:-
1. Take a bowl. Place yogurt in sieve. Cover with plastic wrap. Allow to drain in the refrigerator overnight.
2. Mix cucumber and 1 tablespoon salt in small bowl. Cover and chill 3 hours. Transfer drained yogurt to another bowl.
3. Mix in sour cream, lemon juice, dill and garlic. Squeeze out excess liquid from cucumber. Stir cucumber into yogurt.
4. Season with pepper. Cover and chill for at least 2 hours. Enjoy with skewers :D

Christmas Colors Chilli Fish

Sweet and chilli flavored food is always welcomed on fests and occasions. For many of us, appetizers are the favorite part of the Christmas feast. Isn't it? And on top of that tangy-spicy appetizer is something you can't resist. So, I decided to prepare tangy fish. Yummzz! Hope you liked my recipe, grilled fish (cod). I am very fond of varieties of fish especially pomfret as it is rich in vitamin A, vitamin B3 and vitamin E. It also helps in fighting wrinkles and skin redness. It adds moisture to your skin. 
 
Soy sauce is an awesome ingredient to flavor recipes. It's the most common in Asian cuisine. Most dishes don't specify the type of soy sauce that we use, but they vary wildly as per flavor, texture and appearance. I have used a strong one here to imbibe the Asian flavors. I have used homemade green chilli sauce here to add-on extra spice to the recipe. Tomato Sauce that is a bit sweet is recommended.
Ingredients:-
1 cubed Onion,
1 cubed Capsicum,
1 teaspoon Honey,
3 tablespoons Flour,
Olive Oil for deep frying,
1 teaspoon Tomato Sauce,
1 tablespoon Soya Sauce,
31/2 tablespoons Cornflour,
1 teaspoon Green Chilli Sauce,
1 bunch chopped Spring Onions,
250 grams cubed deboned Fish,
2 teaspoons Ginger-garlic paste,
1 teaspoon Black Pepper Powder.
Preparation Method:-
1. Make a thick batter of 3 tablespoons cornflour, flour ,1 teaspoon ginger-garlic paste, salt, pepper powder and water. Dip the fish pieces in this and shallow fry in oil until golden brown.
2. Drain and set aside. In the same oil, add the onions and capsicum. When the onions start to turn pink, add the ginger-garlic paste. Stir until fragrant.
3. Turn the heat to high. Add the soya, chilli and tomato sauce. Mix well and reduce heat. Add the fried fish pieces. Again mix well and cook on low heat.
4. Mix well the 1 teaspoon cornflour in 4 tablespoons water. Add to the fish mixture and cook until the sauce thickens and coats the fish completely. Add chopped spring onions and honey. Serve hot with your fav drink.

Merry Christmas Food Ideas

Food ideas for any party is all about smart cooking and great presentation. Isn’t it? Nevertheless, whatever looks good tastes delish. Indulge yourself in the spirit of Christmas with yummy, quick and easy recipes. It is certain that you would like to spend maximum time with friends and families and not in the kitchen. I am going to disclose some swift fun food ideas right away!
Christmas Wreath (Ham-Veggie Crescent Wreath) - Grab some fresh bruschetta from the market, arrange on a plate in form of a wreath as shown. You can also use homemade garlic and cheese bread, if time permits. I prefer cheese and garlic bruschetta bread. Add on it, the topping of your choice. Spicy mayo and honey cream form a great topping. To it add diced ham and roasted veggies. Just bake the bread for 2 minutes before adding the topping. Get an eye-catching and sumptuous party appetizer. 
Snowy Deer Muffins (Chocolate/Vanilla Muffins) - Any party is incomplete without desserts, isn’t it? Make the muffins of your choice. They can be simple, raisins or berry muffins. The game here is only the way you present it. Prefer a smooth base and spread chocolate evenly. You can also add vanilla cookie on the top, as shown. Add pretzel to make horns of the deer. Decorate eyes with berries/small candies. Enjoy the cute treat with lots of goodies within.
X-Mas Tree pizza (Mini Veggie Pizza) - Prepare the pizza base beforehand. You can make variant of shape using special baking cutters eg. Christmas tree or Star-shape. Ah! kids are gonna love it. Just bake with your favorite cheese and veggies. The taste will be doubles seeing these mini cheesy pizza bites. Even a novice cook can master the art of preparing pizza. So let the fun begin with this veggie and cheesy treat.

Spicy Christmas Mini Meat Pies

Hi pals! How are you doing? It's the Christmas month and we all crave to have goodies on the weekends. Isn’t it? So here I present before you, the cute yummy bites of flaky dough stuffed with spicy ground beef/turkey mixture. These are very filling and best to be served with tomato and chilli sauce. The best part here is that you can enjoy the meat of your choice. You can also use any kind of low fat cheese instead of cheddar cheese. The hotness quotient (usage of sauce) of this meat recipe can be made flexible. I have only combined the best of rich Christmas flavors to make a pie that both children and adults will adore. 
Ingredients
For Filling:-
1/2 cup Chilli sauce,
2 tablespoons Onion Soup Mix,
1 pound ground Turkey or Beef.
For Dough:-
3/4 cup Milk,
1 teaspoon Salt,
1 cup Shortening,
1 tablespoon Vinegar,
3 cups All-purpose Flour,
3/4 cup shredded Cheddar Cheese,
1 tablespoon Sesame seeds (Optional).
Preparation Method:-
1. Cook beef over medium heat until done. Stir in chili sauce and soup mix. Set aside.
2. In a large bowl, combine the flour, sesame seeds and salt. Add shortening and cheese until crumbly. Mix milk and vinegar. Slowly add it to the flour mixture. Knead the dough.
3. Divide the dough in 2 halves. Make 2 rolls out of the dough, which should be thick enough to hold the filling. Cut circles with the help of a mini meat pie cutter.
4. Top each with a tablespoonful of meat mixture. Cover with remaining circle (dough). Moisten edges with water. Press with a fork to seal. Cut a slit on top of each as shown.
5. Bake at 425 D. F for 15 minutes. Serve hot with tomato and chilli sauce!

Enjoy Thanksgiving with Healthy Turkey Mushroom Burgers

The turk turk festival is here, yes Thanksgiving with grand Thanksgiving recipes. I would love to spend minimum time in the kitchen on that auspicious occasion. My sister and her hubby will be here along with the kids. So I thought of preparing a quick and easy recipe, that is healthy too. Kids are gonna love it. This is called Healthy Turkey Mushroom Burgers. The best part is that you can include the veggies of your choice and low fat cheese if you are a fitness freak.
I love the recipes that are tasty as well as healthy. Low-sodium cheese will help you in finding among healthier cheese and that is what I opt for. Turkey breast is a good choice for a healthy diet. It is an excellent low fat and high protein food. This white and lean meat also helps in reducing cholesterol levels. It also boosts up the immune system. And as far as the taste is concerned,  Worcestershire sauce adds flavor to the recipe along with the garlicky touch of garlic salt. So here we go with the servings for 2.
Ingredients:-
A pinch Garlic salt,
4 slices Swiss Cheese,
1/2 tablespoon Olive oil,
2 split Hamburger Buns,
1/4 teaspoon Onion Salt,
1 cups sliced Mushrooms,
A handful chopped fresh Parsley,
1/2 tablespoons Worcestershire Sauce,
1/2 pound lean spiced Turkey breast (2 slices).
Preparation Method:-
1. Stir fry in olive oil, mushrooms, parsley, worcestershire sauce, and onion salt. Pan-fry the spiced lean turkey breasts.
2. Place the base of burgers. Add cheese slice, turkey slice, again a cheese slice and mushrooms. You can add on greens if you want to.
3. Enjoy with French fries and roasted veggies. Yummzz..

Happy Halloween with Pumpkin Chickpeas Fritters

It’s Halloween, it’s party time. I’m not gonna spend too much time in the kitchen, are you? I had guests in the evening yesterday. Luckily, I had leftover boiled chickpeas from the dinner, the night before. Since Halloween is approaching I’m trying out different pumpkin recipes, so I had canned pumpkin available as well. Rest all the ingredients are integral part of any kitchen. So I prepared quick and easy Pumpkin Chickpeas Fritters. My guests loved it, and so will yours. Pumpkin Chickpeas Fritters
Ingredients:-
1 beaten Egg,
Olive Oil to fry,
Salt as required,
1½ cups Pumpkin,
1 teaspoon Cayenne,
2 cloves minced Garlic,
2 chopped kale leaves,
1 teaspoon Lemon juice,
Breadcrumbs as required,
1 cup cooked Chickpeas,
1 teaspoon smoked Paprika,
cup toasted Sesame seeds,
2 tablespoons Apple cider vinegar.
Preparation Method:-
  1. Add chickpeas, pumpkin, egg, apple cider vinegar, garlic, kale, sesame seeds, smoked paprika, cayenne, half of the bread crumbs and salt to the blender. Blend until smooth. 
     
  2. Form 6 patties. Coat in breadcrumbs. Fry in a pan, turning once, till golden brown on each side.
  3. Garnish with Italian seasoning. Serve with your favorite dip!

Happy Father’s Day with Vegan Grill Ideas

My dad is vegan but is very fond of summer grills. I wanna prepare something unique on "Father's Day". Lets have a look at vegan grilling ideas today. Hope you liked my blog, Chill with 6 grills. Number of vegans are increasing rapidly day by day. Grilling has been pretty simple for the non-vegetarians. Just as meaty grills blend very well with marinated sauces, similarly grilled eggplant with cashew sauce is a perfect combination to try out. You wanna have a look at more of these substitutes, here we go..
So lets talk about Substitute:-
Substitute for Fish - Hope you've heard of nori sheets, wakame and dulse. They are salty and taste like seafood. Seafood like fish and shrimp can be easily replaced by these. Check out these following vegan grill. Yummzz!!
Substitute for Cheese - Soft cheese can be flavored in a number of ways. Instead of cheese we can use raw cashews. These cashews can be pureed and seasoned with water. It becomes thick and spreadable. The creamy sauce can be very well coated on any vegetables and even fruits. The cashew sauce can be made sweet and sour accordingly. Have a look at the vegan cashew sauce that satisfy your craving.
Substitute for Milk - We can blend grains, nuts or beans with water. With the appropriate proportion of these ingredients with water, a thick solution can stick on to our favorite vegetables or fruits. You can use your favorite grains. The coating is nutritious as well. I made bean sauce. 
Substitute of Egg - Tofu is a great substitute for cream cheese. Hope you liked my homemade vegan cream cheese. This is one method. The other method is that we can crumble sauteed tofu with turmeric. This adds color to it. Yuba a.k.a tofu skin, when wrapped around vegetables such as potatoes etc. taste similar to that of an omelette. My friend had tried this in his last summer grill party. 
Substitute for Meat - Mushrooms and porcini make great broths and vegetable stocks. These when coated with smoked paprika and other chili delight, make us forget our affair with the meat. Needless to say they are great replacement for all kinds of meat. Moreover I just love mushroom grills.
