Ginger-marinated Grilled Portobello Mushrooms - The Vegan Recipe

Appetizers always remind us of deep fried snacks. Can’t we have delicious as well as healthy food?? Here we have ginger-marinated grilled portobello mushrooms that include both taste and health and serves as perfect snacks for the people on vegan and vegetarian diet. Every bite of heart-healthy food delivers a powerful dose of phytonutrients. This is the essence of preventing heart diseases. Portobello mushroom is good option for stuffing and grilling because of the firm texture and larger size. 

Portobello mushroom does not contain any fat or sodium. Pineapple is excellent source of vitamin C. Ginger is a wonder spice with digestion friendly properties. Balsamic vinegar adds to the tangy taste. Basil herb is one of the most recognized and nutritionally rich herbal plants and acts as a healing agent. The recipe hardly contains any fat. Moreover this recipe is one of the quick and easy appetizers, whether it is your loved ones birthday party or your very own kitty party. Let's have a look at this recipe.
Ingredients:- 
 
4 large portobello mushrooms,
1/4 cup balsamic vinegar,
1/2 cup pineapple juice,
2 tablespoons chopped fresh ginger,
1 tablespoon chopped fresh basil

Preparation Method:-

1. Clean mushrooms with a damp cloth and remove their stems. Place in a glass dish, stemless or gill side up.
2. To prepare the marinade, in a small bowl whisk together the vinegar, pineapple juice and ginger.
3. Drizzle the marinade over the mushrooms. Cover and let marinate in the refrigerator for about 1 hour, turning mushrooms once.
4. Prepare a hot fire in a charcoal grill or heat a gas grill or broiler. Away from the heat source, lightly coat the grill rack with cooking spray.
5. Position the cooking rack 6 inches from the heat source. Grill or broil the mushrooms on medium heat, turning often, until tender.
6. Baste with marinade to keep from drying out. Using tongs, transfer the mushrooms to a serving platter. Garnish with basil and serve immediately.

It is often said, 'there's no better feeling in the world than a warm pizza box on your lap'. This time close your love’s eyes and place this warm pizza on his lap. Your love will be more than surprised to see the pizza of heart shape. The shape requires no such creativity, it can be done with simple knife. Top with oregano and chilli tomato sauce.


Fried Potatoes Heart-shaped Chips
Heart shape cutter is readily available in the market. Thinly slice the potatoes. Make a mixture of cornflour, salt and ground pepper and water. Coat the chips with the mixture. Delicious heart chips are ready in no time. Fry them in batches, topping with your favorite sauce. Yummzzzz!!!


Heart Shape Vegetarian Roasted Mushroom Lasagna
This recipe is a bit time consuming but a very small sacrifice to see a smile on you love’s face. This is rich lasagna entree with its layers of rosemary-roasted mushrooms, nutty fontina cheese plus sweet Parmesan cream sauce. For garnishing, saute some sliced mushrooms in butter with a pinch of rosemary leaves and scatter over the top of the lasagna. Tempting!!!

Valentine’s Day Special Mozzarella Cheese Filled Hearts

On the Valentine’s Day, I’ll love to give all the time to my love. Spending too much time in the kitchen that evening would certainly ruin the perfect date. I’ve found out a delectable pesto treat for my love, so that i can have some quality time. Pesto can be made a few days in advance and kept covered in the refrigerator. Special Mozzarella cheese filled hearts would be the perfect bitings to start with. The heart shape appetizers will melt his heart after a tiring day at office. With lots of hugs and kisses, celebrate this Valentine’s Day with perfect appetizers, Mozzarella Cheese Filled Hearts.
Ingredients:-

For Cheese Filled Hearts:-

1 refrigerated pie crust thawed,
1/4 inch mozzarella cheese slices,
1 egg white,
2 tablespoons grated Parmesan cheese,
flour for dusting.

For Roasted Red Pepper Pesto:-

12 ounce roasted red peppers,
1 teaspoon minced roasted garlic ,
2 ounces chopped roasted and salted almonds,
1 tablespoon chopped Italian parsley,
1/2 teaspoon lemon juice,
3 tablespoons grated Parmesan cheese,
2 tablespoons Extra Virgin Olive Oil,
pepper to taste,
salt to taste.

Preparation method:-

1. Unroll pie crust onto a large cutting board.  Cut 24 hearts using the larger heart cutter, re-rolling dough as needed.

2. Cut 12 hearts using the smaller heart cutter out of the mozzarella cheese slices.

3. Brush egg white over one dough heart, place a mozzarella cheese heart in the center.

4. Top it with a second dough heart, press the edges of the dough together. Repeat the process.

5. Crimp edges of hearts with a fork. Brush tops of ravioli with egg white.  

6. Place on a parchment paper lined baking sheet. Sprinkle Parmesan cheese over the tops of each heart

7. Freeze hearts for 20 minutes. Meanwhile, preheat oven to 400 D F and make pesto.

8. Puree roasted red pepper, roasted garlic, roasted almonds, parsley, lemon juice, and 3 tablespoons of Parmesan cheese

9. Add oil and puree just to incorporate the oil. Season with salt and pepper, to taste. Pour into a small serving bowl.  

10. The pesto can be made up to a few days ahead of time and kept covered in the refrigerator.

11. Remove the hearts from the freezer and bake for 12 minutes until golden brown.

12. Be careful while baking. If the cheese begins to ooze out of the pie crust hearts, remove them from the oven.

13. Serve hot with marinara sauce.
